I love the concept of blending different ethnic food elements to create a palate-pleasing experience. There is no better way to experience a culture than by experiencing the food. Vermillion Restaurant allows us to experience both Indian and Latin cultures at once with their creative fusion restaurant. I visited Vermillion in Chicago but they’ve also opened a restaurant in New York City.

Vermillion fuses Latin and Indian food to create dishes such as Tandoori Skirt Steak which combines churrasco in an Indian marinade and is accompanied by plantain chips, chorizo spinach, and jicama citrus, staple foods throughout many Latin countries. Another favorite is the Caldeirada de Peixe, traditional Brazilian seafood stew, but fused with Indian seasonings for a slightly different taste of this Brazilian favorite.

According to Vermillion’s website , owner, Rohini Dey created the Latin-Indian fusion because of “their deep historical cross influences (Arab & Persian on both Indian & Spain, Portuguese in Indian & S. America, direct migratory flows) and the commonality of ingredients across these tropical zones (heavy use of guava, tamarind, coconut, plantain, saffron, rice, beans, corn, cilantro, to name a few).”

In addition to serving great food, Vermillion also conscientiously honors both Indian and Latin culture and history in their dishes. If you can’t afford the trip to India or Brazil or if you’d like to relive your last trip, Vermillion will transport you there with warm spices, rich sauces, and sophisticated and earthy ambiance.
